Tapioca Cake / Kuih Bingka Ubi Kayu



Ingredients:-
1 kg grated yellow tapioca (ubi kayu)
230 gm castor sugar
2 eggs
1/4 tsp salt
200 gm thick coconut milk/santan
100 gm water (blended for the juice)
3 pandan leaves (blended for the juice)

Method:-
1) Preheat oven to 175'c
2) Blend the pandan leaves in 100 gm water, squeeze out the pandan juice. Set aside.
3) Greased a 11 inches round pan with butter or margarine you can also lined it with banana leaves, greased it with cooking oil.
4) Lightly beat the eggs with the sugar till dissolved if possible.
5) Mix the egg mixture into the grated yellow tapioca.
6) Followed by salt, coconut milk and the pandan juice.
7) Using hand, mix thoroughly till well incorporated.
8) Now, pour in the mixture into the prepared round pan and level the surface properly.
9) Bake for 40 mins at 175'c and another 10 mins at 200'c.
10) The top of the cake should be light golden brown.
11) Test with a skewer, should comes out clean.
12) Cool on wine rack for at least 3 hours (overnight) before cutting into serving pieces. 


* This tapioca cake is a very simple to make cake. The yellow tapioca texture itself is very starchy and chewy when cooked and so we just have to add in various kind of flavor.
