Huat kuih/ Fatt Koh (Steamed Rice Cake)

This is the simplest and fastest method to prepare Huat kuih/Fatt koh for festivals prayers.



Ingredients :-
200 gm blended rice flour
100 gm castor sugar
180 gm water
1 packet of fresh ENO (fruit salt)
red & yellow coloring
Some paper cases

Method :-
1)  Heat up a steamer with water in advance.
2)  Using a blender, pour in water, castor sugar and blended rice flour into the jug.
     (If you don't have a blender, you can use a whisk to mix all together thoroughly)
3) Then press ON and let it blend until all the mixture are well combine.
4) At the meantime prepare the moulds with paper cases. (about 10 cups for this recipe)
5) Lastly add the ENO (fruit salt) into the mixture and let it blend until well mix.
6) Separate the batter into 2 portions, add in the food colouring respectively. Stir to mix well.
7) Pour in the cups lined with paper cases gradually, begin with the red batter then follow by the   yellow batter.
8) The batter must be at least 95% full.
9) Immediately place into the steamer rack and steam for 15mins over rapid boiling water.
10) After 15mins, it's fully cooked and crack beautifully.
11) Remove the cakes from the moulds and cool on wire racks.

*Secret tips of successful blooming of Huat Kuih/Fatt Koh when steamed is:-
 1) The ENO (fruit salt) must be of new stock when you buy from sundry shops.
 2) Water must be boiling rapidly when steaming.

    1. Buy the small packet ones, just one packet will be enough for this recipe.
