Classic Red Velvet Cake







Classic Red Velvet Cake, the flavor is very rich, buttery and moisture. Texture is great and the frosting layering is so creamy, enriched with cream cheese, cappuccino, liquor Kahlua combining the fresh cream.

My recipe for this, is doubled for 4 layers of cake.







Here it goes:-

Ingredients:-
340 gm castor sugar
125 gm butter
200 gm yogurt/buttermilk
310 gm cake flour (sifted)
1 tsp salt (sifted)
2 tbsp  cocoa powder (sifted)
1 tsp baking soda (sifted)
2 tbsp red food coloring
2 eggs

Method:-
1) Preheat oven to 175'c, line and greased two 9 inches round cake pan
2) Sift all the dry ingredients together, set aside.
3) Mix red coloring to yogurt or buttermilk, stir and set aside.
4) Cream butter and sugar until whitish then add in egg one at a time. Beat until creamy.
5) Add in vanilla extract.
6) Slow down the speed to medium, scoop in the sifted ingredients alternately with the yogurt mixture. (3 additions)
7) Beat until well combined and pour evenly into the lined and greased round pan.
8) Bake at 175'c for 30 mins. Cool off on wire tray. 



For the frosting:-

Ingredients:-
180 gm cream cheese
250 gm fresh cream
2 tbsp cappuccino
1 tbsp liquor Kahlua (mix with the cappuccino)
2 tbsp icing water
1 tbsp gelatine powder + 3 tbsp water (double-boiled until dissolved)

Method:-
1) Whisk up the fresh cream until stiff peak, set aside.
2) Beat up cream cheese and sugar until creamy.
3) Add in cappuccino mixture and gelatine.
4) Scoop in the fresh cream and mix until well combined.
5) Ready to use.  



                                                      To assemble the cake:-

1) Place one layer cake onto a board , spread a layer of frosting evenly on top.
2) Then followed by another piece of cake. (If you are making one recipe i.e. 2 layers only)
3) Spread generously with frosting all over the cake, sides and top. Sprinkle crumbs all over.
4) Decorate the cake as you wish.
5) Store in fridge for a least 1/2-1 hour before serving.
