Chinese Mi Ku / Mantou





Our Chinese "Mi Ku" or Mantou, without any filling just plain pau dough. Added a drop of red colouring to the water and mix to the flour mixture. Ingredients consists of instant yeast, pau flour, sugar, salt and water+colouring only. Knead to a pliable dough and divide into portions, shape, placed on a piece of paper and steam on high heat for 20-23 mins.






Here's goes the recipe :-
Ingredients :-
300 gm pau flour (I used Bluekey brand)
155 ml water
1 tsp instant yeast
50 gm sugar
a pinch of salt
red coloring






Method :-
1) To prepare the yeast mixture :- Take 1/2 tsp sugar from 50 gm sugar, 1/2 bowl of water from 155 ml water and mix with the instant yeast. Stir till dissolve and leave aside till frothy.
2) Combined the flour, salt, remainder sugar together.
3) Add red coloring to the rest of the water and stir.
4) Make a well in the flour mixture, pour in the yeast mixture and water (red).
5) Knead to a pliable and smooth dough, divide to portions, shape and placed onto a piece of ready cut white paper.
6) Placed onto a steamer tray and proof till double in size for about 1/2 an hour.
7) Then steam for 20-23 mins over high heat.
8) Cool on wire rack.
* when steaming do not open the lid to peep !
