Seafood Chowder With Crusty Bread Bowl


Seafood Chowder With Crusty Bread Bowl. An edible bowl, tough enough to hold this creamy chowder. Crackly and crusty on the outside, soft inside.









The making of "Seafood Chowder" !

For the crusty bread dough recipe :-

Ingredients :-
400 gm bread flour
1 tsp salt
1 tbsp sugar
1 tbsp cooking oil
2 tbsp instant yeast
lukewarm water (estimate)


Method:-
1) Place yeast, 1 1/2 tbsp flour, 1/2 bowl water and mix well till all dissolve. Set aside till fermented and rise up with bubbles.
2) Sift the flour, salt and sugar and pour in the fermented yeast mixture and water to incorporate into a pliable dough.
3) The dough must not be too soft (like the picture illustrated).
4) After kneading for 15 mins into a smooth and elastic dough, rest to proof for 30 mins till double in size.
5) Punch down the dough to let the air out, place on a floured board, cut out into 3-4 portions(depends on bigger or smaller bowl).
6) Fold and round it up like in the picture. Place on greased tray and proof again for 1 hr till well risen.
7) Bake in oven for 10 mins at 175', remove from oven and spray some water over the bread buns.
8) Bake again for another 20 mins at 173' till light golden brown.
9) Cool on wire tray, cut off the top of the bread bowl using a sharp knife. Carefully scrap out the excess bread inside, leaving a hollow bowl like. Set aside.
10) Repeat with the rest of the bread.
11) Bake the hollow bread bowl again in the oven for 10-15 mins at 173' till crispy and crackly texture.Its ready , scoop the chowder into it and serve whilst hot.




Ingredients for "Seafood Chowder" :-
potato (cut into cubes)
celery (cut into pieces)
salmon (cut into pieces)
prawns (cut into pieces)
1 big onion (cut into cubes)
1 pc chicken cube
5 tbsp. flour
butter
black pepper powder
white pepper powder
salt
3 cups milk
2 cups cream

Method ;-
1) In a deep pot, boil some water,potato cubes, chicken cubes, celery, big onion for 20 mins.
2) Meanwhile, in a frying pan, melt butter and fry the flour for 3 mins, pour in the cream. Stir-fry till well mix.
3) Pour the flour mixture into the pot of vegetables and stir well.Follow by the salmon, prawns and keep stirring till cook. Add in the seasoning.
4) Slowly pour in the milk and keep stirring till creamy and thick.
5) Ready for use.

* You may prepare the chowder earlier than the bread bowl, for convenience purpose.
**For the bread recipe, forgot to measure the water volume.
