Apple Pie

 
Puffy, flaky and layered pastry with apple and raisin filling. The filling must be very soft & slimming that goes so perfectly with the flavor of the pastry.

Manage to make this puff pastry and stored in the freezer few days ago. Thaw it to room temperature and start rolling and folding again.
 
This is the basic puff pastry recipe. So here it goes ,


Ingredients for the puff pastry :-
400 gm flour
1 egg
70 gm butter
150 gm water
1/2 tsp salt  (A)
300 gm pastry margarine
1 egg (beaten for brushing)
 


Method :-
1) Mix (A) into a dough and let it rest for 10 mins.
2) Transfer to a floured table top, roll out and apply pastry margarine onto 2/3 of the pastry.
3) Fold 2 sides overlapping each other. Flatten it again and fold. Repeat 3 times.
4) Flatten it again, cut out pastry to fit the pie pan. Press the pastry down to fit the bottom of the pan.
5) Gradually spoon the apple filling to fill the pie pastry and level it.
6) Using a pastry cutter, cut out strips of the remainder pastry to cover the pie as picture shown on the left side.
7) Seal edges with egg beaten and crimp edges using a fork.
8) Egg wash the whole pie. Bake at 173' for 30 mins.
9) Cool on wire tray .

Ingredients for the filling :-
3 apples (peeled, diced to small pieces)
75 gm raisins
3 tabsp cornflour
3 tabsp sugar
1 tsp cinnamon powder
1/2 tsp nutmeg powder
2 tabsp brown sugar

Method:-
1) Boil the apples in a saucepan till soft. Drain.
2) Cook apples with 2 types sugar and spices till all sugar dissolve and sticky.
3) Stir in the cornflour and stir till well mix.
4) Off the heat, add in the raisins. Mix well.
5) Serve as filling.
* Apples preferable ripe and sweet ones.
