Steamed Black Pepper Prawns
"Steamed Black Pepper Prawns" ! As usual, when steaming seafood, Bentong ginger is the main ingredient, follow by beaten egg.
Here's the recipe,
Ingredients:-
Big prawns (seasoned)
Bentong ginger (shredded)
chopped small onions
chopped garlic
1 tbsp black pepper
2 beaten eggs
light soya sauce
pepper
oyster sauce
sesame oil
sugar
3-4 tbsp Chinese rice wine (good quality)
salt
water
Method:-
1) Season prawns with salt and pepper for 10 mins. Place on a platter, spread all the shredded ginger over and under it.
2) Fry the chopped ingredients. till light brown and set aside.
3) Mix light soya sauce and pepper to the beaten eggs and mix well. Set aside
4) In a saucepan, heat up 1/2 bow of water ( for more gravy), stir in the oyster sauce, light soya sauce, sugar and sesame oil. Let it a boil or two. Set aside.
5) Steam the prawns on high heat for 10 mins, open up the cover, pour in (4) all over the prawns.
6) Steam again for another 3 mins, open up and pour in Chinese Wine, (3) and sprinkle black pepper all over the surface . Cover and steam again for 5 mins till cook.
7) Best serve hot with fried shallots n garlic. Garnish with some chopped spring onions (run out of it).
