Banana Hazel Nut Bread

Another type of quick bread recipe, a very moist and delicious "Banana Hazel Nut Bread"!

Easy and simple to make. Main ingredients consists of very ripe bananas, hazel nuts instead of walnuts. Not discarding any of my sourdough starter today, I added 3~4 tbsp. starter to this recipe as leavening agent.

If you have sourdough starter, u may add some, to this recipe, it adds to the flavour and as leavening also.




Here's the recipe,


Ingredients:-
350 gm plain flour
17.5 gm baking powder
1.75 gm baking soda
4.37 gm salt
140 gm sugar
walnuts/hazelnuts (toasted & chopped)
140 gm eggs
350 gm mashed banana
115 gm melted butter
3-4 tbsp. sourdough starter



Method :-
1) Using quick bread method : Sift all the dry ingredients together in a mixing bowl. Add the chopped nuts and mix well.
2) Another bowl, mix the eggs, butter, mashed banana, sourdough starter and whisk to mix well.
3) Now, pour the wet ingredients to the dry ingredients and blend just well.
4) Pour into a greased loaf pan and level the top.
5) Bake in preheated oven at  200' for 50-55 mins. Test it with a skewer.
6) Cool in a wire rack and slice to serve.

  2. When I add the Sourdough starter do I add also the baking powder also to the recipe.

    In your recipe it calls for 17.5 grams that seems such a lot for only 350 grams of flour.
    Can you say if this is correct.Thanking you.

    1. Hi Pat. Sorry for replying late.
      Yes, you need to add in baking powder and baking soda too. I added sourdough starter to add in more flavor only. You can use self-raising flour if you think 17.5gm of baking powder is too much.

    1. Yes, you can omit sourdough starter. In this recipe it's more to adding flavor to this bread.
