Pancakes









Pancakes for teatime, served with maple syrup, butter, fruits and not forgetting a cup of tea, of course.














Here's the recipe,





Ingredient:-
200 gm cakeflour
5 tbsp sugar
 2 tbsp cornflour
1 tbsp baking powder
1 tsp baking soda
2 eggs
200 ml milk (more or less)
2 tbsp cooking oil
1/2 tsp salt

Method:-
1) Sieve the dry ingredients in a mixing bowl, whisk till bubbles, pour in the milk, sugar and whisk till sugar dissolve.
2) Pour in the drying. and well combine. Leave it to rest for 5 mins.
3) Heat up a non stick pan or griddle, grease it and wipe off the excess oil, spoon the batter on to the pan. Leave the pancakes to cook till bubbles appear and edges changes dull in colour .
4) Turn it over and cook the other side till evenly brown. Do not over cook the pancakes, turn out hard !
5) Place the cooked pancakes onto a piece of towel, flip it over and cover it. (To stay soft)
6) Serve the pancakes with butter, maple syrup, jam and fruits.

* It's a very tricky part- frying part. Usually the milk, I will estimate the batter consistency, not too runny and too sticky.
