Scottish Shortbread
"Scottish Shortbread", my long time recipe kept away in my old cabinet drawer. When making this shortbread, a good quality butter is the utmost important ingredient. It will give our shortbread an irresistible tasting fluffy flavour.
Here's the recipe,
Ingredients A:-
150 gm butter (good quality & at room temperature)
50 gm icing sugar
150 gm plain flour
20 gm rice flour
2 tbsp cornflour
1/2 tsp of vanilla extract
Method :-
1) Sift all the ingredients (A) into a bowl.
2) In a mixer bowl, beat icing sugar and butter till creamy.
3) Gradually fold in the sifted ingredient (A) and blend well.
4) Remove and turn out onto a floured table top, roll out to about 1 cm thick rectangular shape.
5) Cut out into lengthy sticks, use a fork to poke holes on the surface.
(My baking pan is way too crowded on the picture shown, leave some spaces in between)
6) Place onto ungreased baking pan and bake at 170 C for about 15-20 mins.
7) Cool off and store in airtight container.
