Hockchiew Chap Chye (Stir Fry Mixed Vegetables)

Hockchiew style- 'chap chye'. Roasted pork used in this dish taste better than ordinary shredded pork. Mixed with fuchok is a bit of Hokkien traditional style of cooking. Sometime we add in some long shredded turnips also- taste 'ho jiak'.

Hockchiew Chap Chye is a local restaurant cuisine and one of the popular dish among the Hockchiew community. Roasted meat esp the spare-ribs parts tasted much better than shredded meat.





Here's the recipe,


Ingredients:-
Roasted meat / shredded pork
Carrots (shredded)
Fuchuk (soaked, cut into pieces)
Chinese cabbage (cut into smaller pieces)
Black fungus (soaked,drained, trimmed)
Tang hoon (soaked, drained)
1 big onion
chopped small onion & garlic
Light soya sauce
Dark soya sauce
oyster sauce
salt, sugar, pepper, msg (opt)
water

Method:-
1) Heat up oil, saute big onion, small onions n garlic till fragrant. Add in the roasted meat, all the sauces, carrots, black fungus, Chinese cabbage, fuchuk and all the seasoning. Fry and stir till really fragrant.
2) Pour in a bowl of water, stir and simmer till cook.
3) Lastly add in the tang hoon, give it a stir and mix well but not too long (as the tang hoon will absorb water).
4) Dish out, sprinkle some spring onions and best
serve hot.

*Shredded turnips, prawns, fish cake can be added if u are using shredded meat.
