Orange Chicken Fillets
It's " Orange Chicken Fillets", served with sticky orange sauces.
Bought some fresh chicken breast, marinated for few hours, dusted with flour, dipped in beaten eggs and deep~fried till golden brown.
Here's the recipe,
Ingredients for chicken seasoning :-
500 gm chicken breast
2 tsp salt
2 tsp pepper powder
1 tsp 5-spice powder (opt)
1 tsp light soya sauce
1/2 cup all-purpose flour
1/4 cup cornflour
2 beaten eggs
Method :-
1) Trim the chicken breast into thin strips.
2) Marinate chicken with all the above seasoning, salt, pepper, light soya sauce, 5-spice powder (opt) for at least 1 hour.
3) Mix the flour and cornflour together in a flat plate.
4) Pour the beaten egg into a plate also.
5) Heat up a wok with simmering oil.
6) Now, hold a piece of chicken meat (seasoned), dust or dab with the flour mixture and dip into the beaten eggs.
7) Immediately place in the oil and fry till both sides light golden brown. Repeat till all done.
8) Drain it well and cut into smaller pieces. Arrange on a platter and set aside while we cook the gravy.
Ingredients for the orange gravy :-
1/4 cup of Sunquick orange juice
sugar & salt to taste
some cornstarch/ tang meen starch/ tapioca starch
Method :-
1) Pour about 3/4 cup of water in a wok/saucepan, let it simmer a little.
2) Add in the Sunquick orange juice and stir well.
3) Follow by salt & sugar to taste.
4) Thicken the liquid with the cornstarch to a sticky consistency and that's it, off the heat.
5) Gradually spread this orange gravy onto the fried chicken meat and garnish to serve.
* Best serve whilst hot !
