Loh Mai Gai (糯米鸡)






A classic dim sum, "Loh Mai Gai (糯米鸡), is one of my kitchen popular dish. Best Thailand glutinous rice, Chinese sausage (lap cheong), black mushrooms and chicken as the main ingredients.







Here's the recipe:-


Ingredients:-
300 gm glutinous rice (soak overnight/drained)chicken pieces
black mushrooms (soaked/drained/ sliced)
chopped garlic
chinese sausage/ char siew

Seasoning :-
5- spice powder
light soya sauce
dark soya sauce
oyster sauce
salt, pepper, sugar
cornflour

Method:-
1) Season chicken pieces with light soya sauce, salt, pepper, sugar, dark soya sauce and oyster sauce. Rub with cornflour.Set aside.
2) Heat up oil, saute the chopped garlic till aroma, pour in the chicken, mushrooms and fry till fragrant.
3) Add in the drained glutinous rice and fry till all combine, pour in 1 bowl of water and stir-fry.
4) Dish out, separate meats and mushrooms.
5) Get ready some small bowls, line the bottom with 1 piece meat, mushroom, sausage/char siew and fill up with the rice.
6) Add in 2 tbsp of water into each bowl. Steam for 1 hour.
7) Serve by turning out the rice onto a plate with chilly sauce.
