Here's the recipe:-
Ingredients for the bread dough :-
700 gm Organic unbleached bread flour60 gm brown sugar
1tsp sea salt
60 gm milk powder
1/2- 1 tsp instant yeast
200 gm mother dough
3 tabsp 100% sourdough starter
1 egg
350 gm warm water
80 gm butter (room temperature)1 egg beaten for brushing
Ingredients for filling :-
raisins
cranberries
cinnamon powder
brown sugar & white sugar
softened butter for smearing
Method :-
1) Mix all the dry ingredients together in a bowl.2) In a mixer bowl, pour in the water, sourdough starter, mother dough and egg, blend well.
3) Follow by the dry ingredients, beat into a dough then scrape all the butter in. Knead into a smooth and elastic dough.(windowpane testing).
4) Rest the dough for about 1/2 an hour at room temperature, cold bulk fermentation for another 12 hours.
5) Transfer to a lightly floured table top, roll out to a rectangular shape, spread/smear butter all over and sprinkle all the fillings evenly on the surface.
6) Gradually roll up the dough from the top like swiss roll, seal edges.
7) Now, cut into appropriate sizes, put in a greased rectangular/ square pan.
8) Brush with egg.
9) Bake at preheated oven at 170 C for 30 mins. (adjust your oven temperature accordingly).
10) Cool and slice into loafs to get the rolls out and serve with creamy cheese glaze.
For the cream cheese glaze :-
cream cheese
butter
warm milk
icing sugar
vanilla extract
Method:-
Mix all very well into very creamy consistency.
