Stir Fried Asam Fresh Water Prawns

Stir~Fried Asam Fresh Water Prawns ! Super fleshy and juicy, is a great choice to cook with this method. Will be giving out this recipe if requested cause really tasted yummy !

Here's the recipe,

Ingredients:-
Big fresh water prawns (marinate with salt, pepper)
5-8 small chillies
1 big onion
some chopped small onions & garlic
some shredded Bentong ginger
1/2 bowl of asam Jawa juice (May need more water if you want more gravy)
1 tbsp of Thailand Tom yam paste
3 tbsp chilly sauce (Maggi / kimball)
1 egg (lightly beaten)
some curry leaves
salt, sugar, Msg (opt), pepper powder
oil for deep-frying
some cornflour for dusting

Method:-
1) Dust cornflour all over the marinated prawns, blend them well.
2) Heat up oil for deep-frying the prawns, fry till half cooked. Scoop up and set aside.
3) Pour out the excess oil and leave around 4 tbsp. oil in the wok.
4) Saute the shredded ginger, big onion till fragrant. Followed by the chopped small onions and garlic, fry till lightly brown.
5) Scrape the tom yam paste and curry leaves into it and stir in the chilly sauce. Now pour in the asam Jawa paste or water and add in the seasoning salt, sugar (about 3 tbsp), pepper powder and msg (opt).
6) Simmer and taste it to your preference, then only pour in the half cooked prawns.
7) Keep turning and mixing the prawns with the gravy until cooked. Gradually drizzled the beaten egg all over the prawns.
8) At this stage, just give it a light stir to distribute the egg evenly.
9) It's all ready to be served, either with steamed white rice or toasted crispy bread.

*Not :  Bigger prawns will need a longer time to cook than smaller prawns. But do not over cooked, the flesh will be less juicy and much tougher.
