Fresh Peanut Root Herbal Soup
"Fresh Peanut Root Herbal Soup" cooked with kampung black chicken & spare~ribs. Some named this soup "Grow Tall Soup" cos usually boiled for teenage children during their growing stages.
Here's the recipe,
Ingredients:-
1 kampung black chicken
some fresh peanut root (washed /soaked/drained)
2 pcs ginger
*Herbs:
red dates
bei ji
kee chee (gojiberries)
*Seasoning :
salt
light soya sauce
Method:-
1) Wash the peanut root very thoroughly under running tap, soaked for 1-2 hrs before use, in between change water often. Ready to use.
2) Chop the chicken to pieces, blanch with hot water and drained. Season with some light soya sauce.
3) Boil water in a deep pot, when boiling, put in the ginger and herbs, chicken pieces, let it boil for 5 mins. Then add in the drained fresh peanut root, cover and simmer for at least 2-3 hours. The flavour of this soup improved with more time simmering.
4) When soup is ready, slowly discard the peanut root and the oil floating on the surface of the soup.
5) Add seasoning to the soup and serve while its hot.
* I added spare-ribs to the soup cos chicken too small. The soup is sweet and fragrant.
