Baby Pandan Chiffon Cakes / Kuih Puteri Ayu






"Baby Pandan Chiffon Cakes/ Kuih Puteri Ayu" !
Its been years since I made this small cutie cakes consisting of very simple ingredients like coconut milk, fresh coconut, pandan juice, eggs, flour, sugar, ovalette and a little salt.











Here's the recipe,



Ingredients:-
250 gm plain flour(sift)
1 tsp baking powder(sift)
3 eggs (A)
200 gm castor sugar

*Blend into pandan juice mixture:
1 bowl coconut milk/santan
6 pandan leaves

1 tsp ovalette
1/2 fresh grated coconut & a pinch of salt (mix well)


Utensils:- 30 small plastic baby chiffon cups.
                 some corn oil for greasing the cups.




Method:-
1) Ready a steamer pot of simmering boiling water.
2) Beat the eggs & sugar in a mixer till risen. Add in the ovalette & continue whisking till light & fluffy.
3) Lower the speed, fold in the sifted ingredients alternately with the pandan mixture.
4) Using a spatula, lightly stir to combine the mixture well. Set aside.
5) Pick up a plastic cup, stuff some fresh grated coconut evenly on the base, repeat with all the other cups.
6) Now, carefully pour the batter over the fresh grated coconut till full.
7) Place all the cups into the steamer and steam for 10 mins.
8) Cool off and loosen the cakes from the cups.
9) And its Done!
