Pure Ginseng Chicken Essence







Homemade Pure Ginseng Chicken Essence !
After the 3 hrs of brewing, bowl of essence is extracted and trapped inside the bowl with ginseng.














Here's the recipe,


Ingredients:-
1 kampung (free range /organic) chicken
3 tbsp of ginseng (Go Le)
1 bowl of water

Utensils needed :
1 big porcelain bowl
1 small porcelain bowl
a big pot with a steamer stand & 1/3 of water
a big plate to cover the big porcelain bowl





Method:-
1) Cut the chicken into big chunks, chop or smash it with the chopper .
2) Place the pot of water over high heat while we prepare the ingredients.
3) In the big bowl, place the ginseng in the center, use the small bowl to cover the ginseng.
4) Gently put all the chicken pieces all on top of the upside down bowl just like the pictures shown.
5) This is optional : pour a bowl of water into it. This is to extract more essence out from the chicken (old saying).
6) Cover the whole bowl with a big plate and place into the simmering pot of boiling water.
7) Double boil for 3 hours.
8) After 3 hours, open up the pot lid, slowly lift up the plate and there you'll see just like the pictures shown.
No liquid at all on the outside, all trap inside the small bowl.
9) Lift up the small bowl and pour out the essence to serve.

*Traditional double boiling method. You can skin the chicken if you want or scoop up the floating oil from the essence.
