Pandan Kaya Layered Cake




Here's the recipe,


*1st Step, Making the pandan sponge cake
Ingredients:-
4 eggs
200 gm sponge cake mix
1 tbsp corn oil
4 pandan leaves + 3 tbsp water
3 tbsp thick santan
a little green colouring


Method:-
1) Add sponge mix, pandan juice, eggs and beat until very smooth.
2) Fold in the thick santan and corn oil.
3) Bake for 35~40 mins.
4) After cooling, sliced the cakes into 3 layers . Set aside.




*2nd Step, For the kaya
Ingredients:-
12 tbsp green pea flour/hoen kwe flour
1 1/2 coconut/ 1200 ml coconut santan (with pandan juice + green colouring)
1 1/2 tbsp instant jelly / agar~agar powder
1/2 tsp salt
245 gm sugar
Some dessicated coconut

Method:
1) Cook 800ml of the santan in deep pot and add in sugar.
2) Stir the rest of 400 ml santan mixture with the green pea flour, salt and stir till dissolve.
3)when the 800ml santan boils, lower the heat, slowly add in the agar agar powder and stir. Slowly stir in the 400ml green pea mixture and stir non stop~cook for 2~3 mins until it thickens (kaya is ready)
4)Wet the baking pans,spread a layer of kaya, spread evenly, lay a layer of spongecake on top and repeat till all complete.
5) Pour the rest of the kaya to cover the whole cake and sides must all cover up.
6) Let it set in the fridge.
7) When its ready, turn out and sprinkle dessicated coconut all on top and sides of the cake.
