Banana Walnut Cake
Again late night baking with very ripe bananas (pisang berangan) and toasted walnuts. The final result : Banana Walnut Cake !!!
Here's the recipe,
Ingredients:-
5 eggs
300 gm cake flour (sifted)
1 tsp baking powder (sifted)
1/4 tsp baking soda (sifted)
1/2 tsp salt
250 gm butter
180 gm castor sugar
230 gm mashed ripe bananas
1/2 tsp banana essence
100 gm toasted walnut (chopped coarsely)
Method:-
1) Beat up butter and sugar till light and pale in colour.
2) Sprinkle the salt and continue beating.
3) Then add in eggs one at a time, beat till very creamy.
4) Pour in the mashed bananas and fold in the sifted ingredients till well combined.
5) Last stir in the banana essence and the toasted walnuts.
6) Scrape the mixture into 2 loaf pans (greased), level the surface.
7) Bake in a preheated oven at 165'c-170'c for 40-45 mins.

8) Let it cool completely, sliced and served.
