Baked Char Siew Buns / Chan Pau
Here's the recipe,
Ingredients:-
500 gm bread flour
100 gm cake flour
80 gm castor sugar
60 gm margarine
50 gm milk powder
1 1/2 tsp salt
1 tbsp instant yeast
240 gm water
1/2 tsp bread improver (opt)
1 egg
Method:-
1) Sift all the dry ingredients into a mixer bowl, mix in the sugar and yeast, margarine break up into crumbs.
2) Break in the egg and pour water to make into a pliable dough. Let it proof until double in size or 1/2 an hour.
3) Punch down lightly, roll into long shape, cut into 50gm per portion until finish.
4) Flatten and wrap the "char siew" filling inside, seal properly and place into ready greased patty tins.
5) Let it proof again for an hour (2nd time proofing) or double in size.
6) Brush the mushrooms' like buns with beaten eggs and spread some toasted sesame seeds for garnishing.
7) Bake for 20 mins at 170° (depending on your oven temperature). Cool on wire rack.
*The Filling Recipe:-
Ingredients:-
4 tbsp fried onion oil
1 tbsp sesame oil
2 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp black soy sauce
1/2 tsp salt
2 tbsp sugar
A little toasted sesame seed
500 gm barbecue pork/ char siew (cut into small pieces)
1/2 bowl mixed vegetables
Cornstarch for thickening
Method:-
1) Mix sesame seeds into the char siew. Set aside.
2) Heat up onion oil, fry mixed vegetables , pour in a little water, add in all the sauces & seasoning.
3) Stir well n thicken with cornstarch.
4) Scoop up the thick gravy and mix into the char siew mixture. Blend well.
5) Cool it in the fridge for easier wrapping.
