Stewed roasted meat with 'kua chye' or Chye Beh
My family's favourite : " Stewed roasted meat with 'kua chye' or Chye Beh ", in Hokkien.
This is one of the recipe, my Mom carried down to me. Cherish her always !!!
Here's the recipe,
Ingredients:-
1 kg of Roasted meat (spare-ribs/ trotters)
2 big 'Kua Chye' (Chinese mustard)
4-5 dried chilies(seeds removed/soaked)
1 bowl of carrots (sliced)
1-2 big onion
1/2 bowl of asam Jawa juice
1/2 bowl of chopped small onions & garlic
5-6 slices of Bentong ginger
4 tbsp.oyster sauce
3 tbsp. light soya sauce
2 tbsp. dark soya sauce
3-4 tbsp.sugar ,
1 tsp. salt,
a pinch of msg(opt),
1 tsp of white pepper powder
Method:-
1) Heat up oil, fry ginger pieces, big onions, small onions n garlic till aroma. Then throw in the drained dried chilies. Keep on frying.
2) Pour in the roasted meat, carrots and 'kua chye', add in all the sauces and fry for a longer time.
3) Followed by asam Jawa juice, seasoning and more water for gravy. Transfer the whole mixture into a deep pot and let it stew till cooked and soft.
4) The taste should be sour sweet salty and a little spicy, scrumptious .
