Steamed Chinese Salty Sponge Cake (Giam Kuih Lin Ko)







Traditional Steamed Chinese Salty Sponge Cake !











Ingredients:-
5 eggs 1 1/2 cup sugar
1 1/2 cake flour (sifted)

some fried shallots (chopped)
7 oz very lean pork
1 1/2 tbsp white soy sauce
a dash msg (opt)

Method :-
1) Heat up a little oil,stir fry the minced lean pork, loosen it up and add in white soy sauce n msg. Fry till fragrant n cooked.
2) Scoop it up and mix with the fried shallots. Set aside for garnishing.
Making of sponge cake :-
3) Beat up sugar and eggs till light and fluffy. gradually fold in the flour. Blend well.
4) Lined a 20 cm baking pan, pour 1/2 of the batter and spread evenly over the pan. Place pan in a steamer and steam over high heat for 10 mins.
5) Remove and sprinkle 1/2 of the garnishing on top.Then pour the rest of the batter over the cake.
6) Sprinkle the rest of the garnishing on the surface of the cake. Return to the steamer and steam for another 1/2 an hour.
7) Cool the cake on a wire rack. Cut into pieces and serve.
